To explore this question, international students from Audencia’s MSc Food and Agribusiness Management (FAM) recently visited MIN Nantes Métropole, the second-largest B2B food market in France after Rungis.

During the visit, students discovered and tasted a range of exceptional products, including:

Discovering the art of meat maturation

They also gained insight into advanced meat maturation techniques, learning how beef ribs are aged for up to 8 weeks using a unique process involving Himalayan salt dispersed in the air. The result?
